White Chicken Chili

  • Here is recipe that was a winner on the Rachel Ray Show!  It is delicious and super easy!
  • Mandi Forester's White Chicken Chili
  • 1 32-ounce box chicken stock
  • 3 cans white beans, left undrained
  • 5 cups cooked chicken (rotisserie or boiled)
  • 1 16-ounce jar salsa
  • 1 8-ounce block pepper jack cheese, grated
  • 2 teaspoon ground cumin
  • 2 cloves garlic, minced
  • Black or white pepper to taste
  • 1/2 cup finely crushed corn chips (optional, if you like your chili thicker)
  • Sour cream, for garnish
Put everything into a pot (except for the Fritos and sour cream).  Set the heat to medium and wait for the cheese to melt...then it will be ready (about 10-15 minutes).  Place Fritos in the bottom of the bowl and put chili over chips.  Add sour cream and more cheese to garnish.  Side note:  I used colby jack cheese

Chocolate Chip Cookie Pizza

Okay, my family loves chocolate chip cookies!  I found this recipe and have been wanting to make it.  I think I will this weekend, but wanted to share in case you wanted to make it, too! Happy Saturday!

1 tube (18 ounces) chocolate chip cookie dough
1 package (8 ounces) cream cheese, softened
1/3 cup of sugar
2 cups of 1/2 and 1/2 cream (cold)
1 package (3.9) ounces instant chocolate pudding mix
1/4 cup chopped pecans or walnuts

-Press cookie dough onto an ungreased 12 inch pizza pan.  Bake at 350 for 13-16 min. or until center is set and cookie is lightly browned. Cool for 5 minutes; run a flexible metal spatula under crust to loosen.  Let it cool completely.

- In a small bowl, beat cream cheese and sugar until blended. Spread over crust.  In a large bowl, whisk cream and pudding mix for 2 minutes.  Let stand for 2 minutes or until soft set.  Spread over cream cheese mix.  Sprinkle with nuts.  Put in the fridge until you are ready to serve!  Sounds YUMMY to me!
